You will want to select multiple vendor if you as the event organizer are looking to provide blanket vendor coverage for all of the vendors attending your event. This could be events such as farmers markets, trade shows or conventions.
If you are collecting certificates of insurance from all vendors then you typically wouldn't require this option. Vendors without insurance, or with insurance that doesn't meet the requirements of the venue would be able to purchase individual vendor coverage through the portal.
